食譜6: Matcha Tiramisu


Ingredients:
- 4 eggs (egg white and egg yolk to be separated)
- approx. 8tsp of (icing) sugar
- 1 pack lady fingers/ sponge fingers/ savoiardi biscuits (Italian ladyfingers)
- 1 cup (300ml) of matcha
- drops of vanilla extract
- 125g of mascarpone cheese
- Matcha powder
- (Optional) Azuki beans aka red bean paste

Preparation:
1) Make matcha (green tea) and leave to cool.

2) Whisk egg white into foam and add 4 tbsp of sugar.
Whisk till stiff.

3) Add 4 tbsp to egg yolk and whisk till ribbon.
(Alternative: add mascarpone to this mixture first)

4) Add vanilla extract and/or matcha (green tea) powder according to taste/colour preference.

5) Fold egg white mixture into egg yolk mixture with spatula.
Add mascarpone (if not added yet) and blend mixture.
Find tune taste and colour of mixture with vanilla extract and matcha powder.

6) Arrange lady fingers onto container base.
Drizzle matcha onto biscuits OR dip biscuits before arranging.
(Optional: Add matcha to biscuits.)
Spread blended mascarpone onto biscuits and cover with a whole layer.

7) Repeat step 6 to form subsequent layers.
Leave to chill in fridge for at least 4 hours.

Finish with matcha powder sizzled on top and azuki beans.
